Summery Fruit Cake

Serves: 6 Cooking time: 25 minutes

This recipe is courtesy of ‘Balanced Living by JJ’ and was inspired by the refreshing fruit salads of the summer season. The yoghurt and oat flour used in the recipe gives the cake its light, fluffy texture. The peach and strawberry give a sweet-tangy refreshing flavour. Finished off with a bit of crunchiness thanks to the almond flakes. It’s guilt-free, no added sugar, gluten-free recipe.

Ingredients:

  • 1 cup of oats, ground in a food processor
  • 4 medium free-range eggs
  • 2 cups of strawberries
  • 3 medium peaches
  • 1 pinch of cinnamon, salt & baking powder
  • 1 tsp of Myprotein Sugar-Free Vanilla Essence
  • 3 tbsp of Myprotein Sugar-Free Raspberry Syrup
  • 1 cup of almond flakes
  • 4 tbsp of fat-free Greek style yoghurt

Method:

  1. Mix the ground oats, eggs, salt, baking powder, vanilla extract, Total Sweet and natural yoghurt 
  2. Add 1/2 cup of almond flakes
  3. Peel and chop up the peaches
  4. Mix in the mixture
  5. Pour in a baking tray lined with baking paper, and top with the other half of the almond flakes. Bake in the oven for 25 mins at 170 C
  6. Put the washed and halved strawberries in a pan, top with the sugar-free raspberry syrup and cook until it’s bubbling 
  7. When the cake is baked, serve it with the strawberry sauce
