Mango Salad Thai Dressing

Serves: 2 Cooking time: 25 minutes

A quick lunch with layers of flavour.


For the salad:

  • Mixed Salad Green
  • Cucumber (thinly sliced)
  • 1 Ripe Mango
  • 1/2 Red Onion
  • Mint Leaves

For the dressing:

  • Juice of 2 Limes
  • 1 tbsp Tamari Soy Sauce - Also worth trying gluten-free soy sauce!
  • 1 tsp Toasted Sesame Oil
  • 1 tsp finely grated Ginger


  1. Whisk the ingredients for the dressing together in a small jug.
  2. Scatter the salad leaves on a large platter. Cut, slice and prepare your other ingredients.
  3. Top your salad with the remaining ingredients and mix well.
  4. Just before serving, drizzle your dressing over the salad. Toss well, making sure the salad and dressing are well mixed.
  5. Grab a fork, and dig in!
