Mango Salad Thai Dressing
Serves: 2 Cooking time: 25 minutes
A quick lunch with layers of flavour.
Mixed Salad Green
Cucumber (thinly sliced)
1 Ripe Mango
1/2 Red Onion
For the dressing:
Juice of 2 Limes
1 tbsp Tamari Soy Sauce - Also worth trying gluten-free soy sauce!
1 tsp Toasted Sesame Oil
1 tbsp Total Sweet Xylitol
1 tsp finely grated Ginger
- Whisk the ingredients for the dressing together in a small jug.
- Scatter the salad leaves on a large platter. Cut, slice and prepare your other ingredients.
- Top your salad with the remaining ingredients and mix well.
- Just before serving, drizzle your dressing over the salad. Toss well, making sure the salad and dressing are well mixed.
- Grab a fork, and dig in!
