Ginger Slice

Serves: 9 Cooking time: 20 minutes

Whether it’s gingerbread men or German Lebkuchen, ginger is an essential flavour of Christmas. These simple Ginger Slices are virtually sugar-free and are deliciously soft and gooey. Pop them in a tin and give them as a thoughtful homemade gift…or keep them all to yourself!

Ingredients:

  • 75g unsalted butter
  • 4 large eggs
  • 1 tsp ground ginger
  • 1½ tsp mixed spice
  • 170g ground almonds processed to make finer if not already extra fine
  • 1½ tsp of baking powder
  • 1 tsp vanilla extract

Method:

  1. Preheat the oven to 180oC or 160oC fan.
  2. Line an 8-inch square tin/brownie tin
  3. Melt the butter in a bowl in the microwave (or other) and add the xylitol and whisk to combine
  4. Spoon into a stand mixer with a whisk attachment
  5. Add the eggs one at a time while whisking slowly
  6. Add the almonds, baking powder, spices and vanilla and mix until smooth
  7. Use a spatula to ensure all the mixture has been taken down from the sides of the bowl
  8. Pour into the lined cake tin
  9. Bake for 20 mins
  10. Carefully cover with foil and continue to bake for 10 mins
  11. Remove from the oven and allow to cool in the tin for 20 mins and then remove and leave to cool on a wire rack
  12. Slice into 9 pieces
  13. This cake can be frozen or kept in an airtight container for 3 days
