Sugar Free Chocolate Biscuits

Ingredients

70g softened unsalted butter

60g Xylitol (processed to make it into a fine icing sugar consistency)

80g plain flour

1 ½ tablespoons cocoa powder

1 tsp vanilla extract

Method

·         In a stand mixer with a paddle attachment mix the butter and xylitol until light in colour (1-2 mins)

·         Add the vanilla and mix again

·         Add the cocoa powder and flour and mix until just combined (if you overmix, the biscuits will become tough)

·         Turn out onto a clean surface and pat the mix together into a disk

·         Using a rolling pin roll the biscuits out to around 3 mm thick and use a cookie cutter to create the shape of your choice (Lightly dust the surface with flour to stop any sticking)

·         If you like you can make some holes on the top of the biscuit with a fork to add interest (this is not compulsory!)

·         Place the biscuits on a baking tray

·         Bake for 8-9 mins (watch you don't burn them)

·         Leave to cool on the baking tray

·         Store in an airtight container and eat within 3 days

NB. I use a coffee grinder to grind my xylitol. These are quite inexpensive and can be purchased easily
